This could well be the best chutney in the world! Rich, spicy and deep with the flavours of India. I end up having it on everything.


Makes about 6-7 cups



1 cup vegetable oil

¼ cup mustard seeds

¼ cup cumin seeds

200g minced ginger

100g crushed garlic

2.5kg chopped tomatoes

450g sugar

2 T turmeric

6-8 red chillies, seeds removed, chopped roughly

500ml malt vinegar

2 T ground coriander

3 T salt



In a large pot, heat oil and add mustard and cumin seeds. Cook until the seeds pop.

Reduce heat and add all remaining ingredients. Stir to combine.

Simmer uncovered, stirring regularly for 1½ hours until thick.

Pour into jars and seal.
