To me fritters are a perfect snack – they’re fast and fun to whip up and paired with a salad can be lunch or dinner, or with a beer or bubbles, they’re great as party food.

 You will need:

200g shelled raw prawns, chopped to about pea-sized pieces 

1 cup peas

2 spring onions, sliced thinly

½ tsp sea salt

1 tsp lemon zest

2 eggs – separated

1 tablespoon flour

Oil for frying – rice bran

2 wedges lemon

1/2 cup mayonnaise

WHAT TO DO

In a bowl whisk the egg whites until soft peaks. In another bowl mix the egg yolks, prawn pieces, peas, spring onions and lemon zest and stir in the flour. Mix to combine, then fold the egg whites through until incorporated.  

Heat 1 T oil in a pan and once hot, drop spoonfuls of the fritter mixture carefully and neatly into the pan. Cook for 2-3 minutes until golden brown and then turn. Cook until the fritters feel firm to the touch. The best way to gauge whether they are cooked is to use you index finger and try to ‘wobble’ the top relative to the bottom with small side to side movements. If it doesn’t wobble, this means that the middle is cooked all the way through. There’s nothing worse than an uncooked fritter!

Serve these tasty little fritters with lemon wedges and mayonnaise with  zest and black pepper stirred through it.
